Kerala Fruit Cake Recipe
Many don't know but Christmas is a big celebration in Southern India and owing to the same reason, there is a traditional Kerala Fruit Cake that's prepared every season! This cake is an epitome of Keralite culture and celebrates the spirit of Christmas in a different way.

Step 1 Caramelize the sugar
To prepare this Keralite version of fruit cake, put a pan over medium flame and add 1 cup sugar in it. Let it melt slowly and then caramelize until dark brown in colour. Make sure it's not burnt but has a good aroma of caramel.

Step 2 Prepare sugar syrup
Once done, turn off the flame and add 1/2 cup water in it, this will harden the sugar. Put the pan back over a low flame and heat it until the caramelized sugar is dissolved. Now, let it simmer for 10 minutes in order to get a good sugar syrup. Once done, let it cool completely.

Step 3 Preheat the oven
Now, for baking the cake, pre-heat the oven at 180 degrees C.

Step 4 Coat the dry fruits with some flour
Then, take a bowl and add all the dry fruits in it. Sprinkle about 4-5 tbsp of flour in the bowl and toss well to coat all the dry fruits. Once done, set aside.

Step 5 Prepare the dry & wet mixture
Finally, start mixing the flour with some salt, baking powder, cinnamon powder, clove powder, and nutmeg powder. Keep aside until required. Now, in another mixing bowl, add 1 1/2 cup sugar and butter, and cream together. Beat them well together using an electric beater. Then, add vanilla extract in it and stir well. Then, crack one egg in it and beat once again.

Step 6 Make the cake batter
Now, using the cut and fold method, make the cake batter. Add some dry mixture in the wet mixture and cut & fold. Likewise, crack an egg in it and then add the dry mixture, until completely mixed. Use the same method until all the eggs are used and the cake batter is mixed completely. To give final touches to the batter, add the cooled caramel sugar syrup along with soaked fruits, and gently mix well.

Step 7 Bake the cake for 50-55 minutes
Once the cake batter is ready, take a large cake pan and grease it with some butter. Once done, transfer the cake batter into it and level it even using a spatula. Put the pan in the preheated oven and bake the cake for 50-55 minutes until the cake turns brown in colour. You can also check using a skewer. Once done, take it out of the oven and let it cool. Serve warm.
