Step 1
Cut cauliflower florets and wash them well in running water. Add the florets to boiling water with some salt on medium flame and let them boil for about 3 minutes. Then switch off the gas and let keep the pan aside.

Next, heat oil in a pan on medium flame and when the oil is hot enough, add cumin seeds along with mustard seeds in it. When they starts spluttering, add asafoetida and curry leaves and saute for a few seconds.

Now, add washed small methi leaves, turmeric powder, red chilli powder and mix well. Cook for a while and then add parboiled gobhi florets in the pan, stir to mix all the ingredients and then add salt to taste. Stir once again and cook for about two minutes.

Now, add some water in the pan and cover with a lid. Bring the curry to a boil and then lower the flame and let the veggies cook in it for 2-3 minutes. (Optional: You can mash the gobhi a little for a thick gravy.)

Then, open the lid and add some sugar along with coriander powder in the pan. Stir to mix and then let the gravy cook for another two minutes. Switch off the gas and garnish with chopped coriander leaves, serve hot with chapati or paratha, as your like!
