  • Step 1

    To prepare this salad recipe, take a small bowl and mix together red wine vinegar, Dijon mustard, virgin olive oil (take half and leave the remaining half), and black pepper. Then, to the same bowl, add roughly chopped tarragon leaves, olives, and capers and toss well. Keep this dressing aside. Take another bowl, and add potato halves, green beans, remaining oil, kosher salt and black pepper, toss well.

    Now, you need to prepare the salmon. For that, put the griller on medium flame and season the fishes with a little kosher salt and crushed black pepper in a large bowl. Put these marinated fishes on the griller and cook with the skin side up for about 15 minutes.

    Meanwhile, add the potatoes on the griller as well and cook them till tender and soft. You can cover the salmon and potatoes. Make sure to change the sides so that the potatoes and the salmon are cooked from both sides. When done, add the green beans and grill them as well for about 3-5 minutes. (Note: The green beans need not be cooked much, they must be crunchy.)

    Once you are done with the grilling, peel the skin off grilled salmon and cut into pieces using a fork or a knife even over a chopping board. Transfer the chopped salmon in a large bowl and pour the red wine vinegar dressing kept aside.

    While serving, make sure you spread the lettuce leaves in a plate and transfer the salmon salad on it along with halved cherry tomatoes. Peel the boiled eggs and cut them into halve and top the salad with these eggs. Enjoy immediately.
