Dahi Bada is what we call them in eastern Uttar Pradesh, in Delhi, they are usually called Dahi Bhalla.
Well, whatever you call them the bottom line is they are delicious and a must-have for festivals. yoghurt or curd based snacks or recipes are always my favourite recipes. perhaps it has a soothing and satisfying feeling when served with a combination of spicy and savoury snack. urad dal vada is one such savoury and spicy snack, which gets smooth and soft when dipped in creamy and sweetened yoghurt. having said that, even before it is dipped in curd, I have dipped in hot water so that it gets soft immediately and also the excess oil is removed. this is the technique it is followed in street vendors or hotels which helps to make it even softer. in addition, the other advantage of soaking in hot water is to hasten the softening process of vada. for instance, it takes double the time vada’s to get soaked and soft in creamy curd as it is thicker compared to water. so dipping in hot water and then eventually soaking or serving it with creamy yoghurt would be an ideal trick for the Dahi Bhalla recipe.
The most loved street snack of India, particularly North India. Dahi Bhalla can also be served as a chilled snack or a starter during the festive seasons like Diwali or Navratri. For Making a Batter:

1 Bowl of Udad Dal

1 Bowl of Moong Dal

Water (As Per Needed)

2 Pieces of Green Chilli

2tp Spoon Salt

Oil ( For Deep Fry)

Hot Water
For Garnishing:

Sweet Yoghurt

Green chutney
-
Tamarind chutney

Red Chilli Powder

Cumin Seeds Powder
સામગ્રી:
ખીરું બનાવવા માટે:

1 બાઉલ અડદ ની દાળ

1 બાઉલ મગ ની દાળ

પાણી (જરૂર મુજબ)

2 નંગ લીલા મરચા

2 ચમચી મીઠું

તેલ (ડીપ ફ્રાય માટે)

ગરમ પાણી
સુશોભન માટે:

મીઠું દહીં
-
લીલી ચટણી
-
આમલીની ચટણી

લાલ મરચું પાવડર

જીરું પાવડર
Notes:
-
firstly, soaking the vada in hot water helps to reduce oil and also makes the vada soft and juicy.

also, if you have enough time, then soak the vada in curd for at least 2 hours before serving.

additionally, make sure to use fresh curd. else you end up adding more sugar.
