Chicken Kosha Recipe(NON-VEG RECIPE)

Bengal, one of the common non-veg curry is 'chicken kosha'. I think everybody is familiar with this name. Kosha / Bhuna is a process where you have to cook the meat with spices on the medium-low flame in its own juices, if it gets dry then only add water as little as possible. It requires time but with chicken, you can make it within an hour. One can make the same curry with mutton, potato, egg, etc. They all taste really delicious. I maintained the recipe very simple and easy. Try this in your kitchen and let me know how it turned out for you.

Step 1

To prepare this main dish recipe, firstly add ginger along with 1 tablespoon water to a grinder jar and grind to make a smooth paste. Transfer it to a bowl. Now, add green chili along with 1 tablespoon water to the grinder jar to make a fine paste and transfer it to a separate bowl. Finally, add garlic with 1 tablespoon water to the grinder jar and grind to make garlic paste. Keep this also in a small bowl.

Now, place a pan over medium flame and add green cardamom, cinnamon stick, and cloves. Dry roast these whole spices until you can smell a strong aroma. Transfer this to a grinder jar and grind to make a coarse powder. This is a freshly made garam masala.

Step 3

Place a deep-bottomed pan over medium flame and heat 3 tablespoons of refined oil in it. When the oil is hot enough, add the chopped potatoes to it. Fry these until they are golden-brown in color. Once done, transfer these to a bowl and place the pan back over the medium flame.

Step 4

Now, add the remaining oil to it. When the oil is hot enough, add sugar to it and let it caramelize. Now, add bay leaves in it and saute it until aromatic.

Add sliced onions to the pan and cook till the onions turn brown in color.

Step 6

Now, add the chicken pieces to the pan with onions and fry them. Next, add the green chili paste, garlic paste, ginger paste, chopped tomatoes, and salt and mix it well. Let this cook until you can smell the aroma and tomatoes become tender. The chicken will release a lot of water. Reduce heat to low and add turmeric powder, Kashmiri chili powder in it. Mix it well to evenly coat the chicken.
