Bengali Sweet Ras malai Sweet Dish

basically, a Indian dessert recipe prepared from paneer balls or chenna and sugar and rabri / rabdi. the sweet is originated from Bengal but hugely popular all over India

Making ras malai at home is not difficult. you can easily make some rasgulla at home and then make the thickened milk. I would suggest making the rasgulla a day or two before and then later make the ras malai. Dividing work this way makes it easy.

This recipe of thickened sweet milk is the traditional method made with reducing milk and thus tastes authentic as the ras malai served in mithai shops.

Ingredients:

For Making Ras Malai Balls:

  • 1 1/2 Litter Milk
  • 2tp Spoon Lemon Juice
  • 2tp Spoon Milk
  • 1 Glass Chilled Water
  • Ice Cubes

For Making Ras:

  • 1/2 Litter Milk
  • Pinch of Saffron
  • Pinch of cardamom 
  • 1/2 Cup of Sugar
  • 1 Cup  of Chopped Almond And Cashew
  • 1tp Spoon Corn Flour

For Making Sugar Syrup:

  • 1/2 Cup of Sugar
  • 1 1/2 Glass of Water

For Garnishing:

  • Cashew
  • Almonds
  • Saffron

સામગ્રી:

રસ મલાઈ બોલ્સ બનાવવા માટે:

  • 1 1/2 લિટર દૂધ
  • 2tp ચમચી લીંબુનો રસ
  • 2tp ચમચી દૂધ
  • 1 ગ્લાસ ઠંડુ પાણી
  • બરફ ના ટુકડા

રાસ બનાવવા માટે:

  • 1/2 લિટર દૂધ
  • ચપટી કેસર
  • ચપટી એલચી
  • 1/2 કપ ખાંડ 
  • 1 કપ કાપેલા બદામ અને કાજુ
  • 1 ચમચી મકાઈનો લોટ

સુગર સીરપ બનાવવા માટે:

  • 1/2 કપ ખાંડ 
  • 1 1/2 પાણીનો ગ્લાસ

સુશોભન માટે:

  • કાજુ
  • બદામ
  • કેસર

Tips:

  • firstly, make sure to have enough room for paneer balls to swell while boiling.
  • furthermore, squeeze the sugar syrup from paneer balls well else it will no absorb rabdi milk.
  • additionally, add nuts of your choice.
  • also never use a thin pan while preparing rabdi, as there are high chances for milk to burn.
  • finally, do not over stir the milk while preparing rabdi as the cream will not form.
