Step 1 Chop pumpkin and cook
Chop 1/4th of a medium-sized pumpkin into small cubes. Take a pressure cooker, add 1 1/2 cup water and pumpkin cubes into it. Cook it on high heat for one whistle. Once done, let it cool, drain the water, and mash the pumpkin until pureed.

Step 2 Mix dry ingredients
In a deep mixing bowl, mix all-purpose flour, baking soda, nutmeg, cinnamon, ground cloves, salt, and baking powder. Set aside.

Step 3 Mix wet ingredients
Take another bowl and mix butter and white sugar together. Cream these two together using an electric beater. Then add pumpkin puree, vanilla essence, and egg to the mixture.

Step 4 Fold dry and wet ingredients gently
Now, gently fold the dry and wet ingredients together to form a soft batter.

Step 5 Preheat the oven and shape cookies on a greased tray
Preheat the oven to 170°C. Place a cookie sheet on the tray and drop the mixture to make medium-sized cookies and gently flatten them using greased fingers.

Step 6 Bake and serve hot
Bake them for 20-25 minutes in the oven or until golden brown. Serve hot with coffee or tea. Store in an air-tight container for 10-15 days.

To make it more enticing you can add nuts and raisins in the dough.
