Keema Kaleji is one of the most adored dishes that are cooked in Hyderabadi cuisine. It is full of scrumptious, strong flavours and the most dominant flavour is red chilli powder. It is usually slow-cooked on low heat for long hours.

Step 1 Clean the mutton mince and liver
Start by washing the mutton mince and liver with fresh water and keep it aside. Meanwhile, finely chop all the vegetables and keep them ready.

Step 2 Prepare the masala mix
Heat 2 tbsp of oil in a pan and add 1 bay leaf. Now add the chopped ginger and garlic along with the chopped onion. Cook this until the onion starts turning golden brown. Add the rest of the masalas and mix. Add a ½ cup of water and let the spices combine well.

Step 3 Add mutton mince and liver, cook and serve!
Now add the mutton keema and kaleji at once and stir it well. Cover and cook for 7-8 minutes or until you see the oil separating. Season with some salt, turn the flame off and garnish with green peas and coriander leaves. Serve hot with naan or Rumali Rotis!
