Healthy Salad Recipe
Ingredients:
- 150 gm chopped spinach
- 1 cup chickpeas
- 1 chopped cucumber
- 1 piece grated ginger
- 1 tablespoon mayonnaise
- 1 teaspoon chili flakes
- salt as required
- 4 sprigs coriander leaves
- water as required
- 1 large grated carrot
- 1 boiled potato
- 50 gm tofu
- salad oil as required
- 2 tablespoon virgin olive oil
- 1 chopped beetroot
- 1 inch sliced & slit ginger
- 2 tablespoon lemon juice

Step 1
Firstly, wash the chickpeas in running water and then put a pressure cooker on high flame and add the chickpeas in it along with required water and close the lid of the cooker. Boil the chickpeas for some time.

Next, when the chickpeas are boiled, put a frying pan on medium flame and heat olive oil in it. When the oil is hot enough, add the tofu cubes and saute them till they get light brown in color, and then turn off the burner.

Now, take a large bowl and add the chopped spinach leaves, chopped potatoes, and beetroot, grated carrots, along with boiled chickpeas. Toss them well.

In the same bowl, add the sliced ginger along with sauteed tofu cubes, chili flakes, lemon juice, salad oil, and mayonnaise. Toss all the ingredients well so that everything is mixed. Serve immediately!
